Vegan Stir fry

Whenever I’m at a loss for what to make for dinner, I immediately turn to a quick and easy stir fry! These can usually be made with whatever veggies you have in your fridge, and the sauce is really simple! I’ve added some Gardein Chick’n Strips because my fiancee really likes meat substitutes but feel free to omit them if they aren’t your thing!

Homemade Vegan Mac & Cheese

This might sound ridiculous but the hardest part of going vegan for me was giving up Mac & Cheese. It’s my all time favourite comfort food, and I had perfected my non-vegan recipe 😭 Once I went vegan, I’m not going to lie to you I cheated a couple times for “real” Mac and Cheese because I just couldn’t find a vegan version that I liked. I tried a few different box versions and I found that they all had a very strong taste that I didn’t love. To me, the most important part of living a vegan lifestyle is not that you restrict yourself until you feel deprived and unhappy, but that you try your best. That’s why I decided to try and create my own homemade vegan Mac and Cheese recipe! This one turned out PERFECTLY. It’s creamy, flavourful, tastes “cheesy” and doesn’t use any fake/processed cheeses.
